Be still, little pitter-patter of my easy breakfast loving heart! Like many of us, breakfast can be a struggle for me. Oh no, don’t get me wrong .. I L-O-V-E an easy breakfast recipe like my Overnight Challah French Toast Casserole, Cranberry Orange Cake and my Purple Potato Breakfast Skillet but I normally A) do not plan properly and B) lack early morning motivation to accomplish an amazing breakfast each morning.
To be honest, (… we can be honest, can’t we? We are all friends here, right?) my daily breakfast routine 99% of the time consists of a Dunkin Donuts XL coffee with cream and a cheese stick.
That’s the breakfast of champions right there! But the dream to be an organized adult and make sound healthy breakfast choices with little effort and even less time is real. Does such a thing exist?

To make this Blueberry Pecan Baked Oatmeal, you will need:

- Eggs – to bind all of the ingredients together and add a bit of extra protein

HOW TO MAKE BLUEBERRY PECAN OATMEAL
To make your Baked Blueberry Pecan Oatmeal, start by preheating oven to 350 degrees and lightly butter a 9 x 13 baking pan. Mix old fashioned oats, brown sugar, baking powder, cinnamon, salt and most of the chopped pecans in a large mixing bowl.
In a separate bowl, combine eggs, vanilla, melted butter, syrup and milk. Pour half of your oat mixture into the baking pan, smoothing to make an even layer and then add a layer on top of half of your blueberries. Pour on and even out the remaining oat mixture. Evenly pour your egg / milk mixture over the entire pan of oats, lightly pressing the oats down to make sure they are all covered in the milk.
Sprinkle on the remaining blueberries and reserved pecans. Bake for 40 – 45 minutes or until the top is golden brown. Remove and let set for 10 – 15 minutes before serving. Leftovers can be stored in the refrigerator for 3 – 4 days and can be reheated in the microwave for 30 – 60 seconds.
CAN YOU USE INSTANT OATMEAL FOR THIS RECIPE?
Instant oatmealis not the same as regularoatmealbecause it is thinly cut, processed and flavored. Instant oatmeal doesn’t bring the same structure tobakedgoods as regularoats orquickoats do. For that reason, I would not recommend using instant oatmeal in any baking recipes.
PRO TIPS FOR PERFECT BLUEBERRY PECAN BAKED OATMEAL
- To make this breakfast casserole ahead of time, bake it and let it completely cool before storing it covered in the refrigerator. To heat up, microwave for 30-60 seconds or cover and bake at 375 degrees for 10-15 minutes.
- Don’t over bake the baked oatmeal. You want this to be creamy, crunchy and soft.
- Want to add even more ompf to this easy breakfast idea? Top it off with your favorite Greek yogurt.
- Not a fan of blueberries? Substitute the blueberries with your favorite fresh fruit, chocolate chips, dried cranberries or peanut butter.
