The Weetbix and coconut give the chocolate slice the perfect texture. It's soft but with a little bit of crunch, this depends on how long you cook it for. If you want a bit more flavour and texture you could add in some chopped nuts.

Pair this with the smooth, rich, velvety chocolate icing and you've got yourself a tasty slice for a sweet snack or an after dinner treat!

Recipe FAQs:

Can I overcook Weetbix slice?

Yes. If you overcook Chocolate Weetbix Slice it can go quite hard. I recommend baking this for 14-20 minutes however, all ovens are different. If you know your oven 'runs hot' test it at the 15 minute mark. It should be soft when you bring it out of the oven and it will firm up as it cool down.

What other ingredients can be added to Weetbix slice?

You can try adding dried apricots or cranberries to the base. Walnuts can be added on top of the icing.

Can Weetbix slice be made gluten free?

Yes! Gluten free Weetbix are available in most supermarkets in New Zealand and Australia. Replace the same amount of weetbix and flour for gluten free alternatives.

What size tin works well for Weetbix slice?

My slice tin is approximately 29 x 19cm. Anything close to this will work. The smaller your tin, the thicker your base will be and the longer it might take to cook.

Can I leave out the coconut from Weetbix slice?

Yes, Weetbix slice will still work well without coconut, simply add 1 extra Weetbix and ½ a cup of additional flour.

Storage:

Chocolate Weetbix slice will keep well in an airtight container in the pantry, or fridge for up to one week.

Did you know you can freeze slices? A great option if you don't want to eat the whole slice in one go! Simply wrap the slice pieces in cling film and store in an airtight container in the fridge for up to three months.

Top tips:

If you chose to freeze pieces of this slice, they are perfect for adding to school lunches. Simply place a frozen piece of slice in a lunchbox in the morning, and it will have defrosted by morning tea time. In addition, it will help to keep the rest of the lunch cool!

FAQs

Why is my chocolate slice crumbly? ›

Happy cutting! Why does my chocolate cake turn out crumbly? Without seeing your recipe it could be a number of things. Over baking would be the first culprit I'd look at, either your oven runs “hot” or you're baking too long.

How to cut caramel slices without the chocolate cracking? ›

How do you keep chocolate from cracking when cutting? Add 1 tablespoon of oil to the melted chocolate – this makes the chocolate topping slightly softer so it doesn't crack!

Why is my chocolate crumbling and not melting? ›

Seized chocolate occurs when the chocolate you're melting comes into contact with moisture. Chocolate itself doesn't contain any moisture, so adding a small amount of liquid can disrupt the melting process.

How do you make chocolate easier to cut? ›

Heating your chocolate up just slightly makes chopping easier, since you aren't trying to hack through chunks of hard chocolate, risking it flying all over the place or resulting in uneven pieces.

How do you make chocolate soft enough to cut? ›

Vegetable oil is my lifesaver and I rarely melt chocolate without it! (Don't use this with candy melts or melting chocolate though, just regular chocolate.) As a fair warning, adding vegetable oil can make it so that the chocolate doesn't harden as quickly or as hard. It can make the chocolate a bit softer.

What is the easiest way to cut caramels? ›

When you remove it from the pan, let it sit at room temp for an hour or so, then run a sharp knife around the edge and then turn out onto a cutting mat. I use an old cutting mat that I can no longer use for fabric. I use a pizza cutter to cut the caramel.

How do you fix crumbly melted chocolate? ›

Use Dairy. Another sure shot way to revive the original texture of the melted chocolate is by adding dairy products such as hot cream and stirring until it's smooth again. The resulting mixture, comparatively, will have a thinner consistency than desired and you might have to alter the recipe.

Why is my chocolate dry and crumbly? ›

The dryness is usually a sign of heat damage on the chocolate. This does not necessarily mean that the chocolate has melted entirely, just that it was exposed to enough heat or heat variation that over time the cocoa fat crystals that make it solid has dissolved.

Why does chocolate go white and crumbly? ›

Why Does Chocolate Turn White? Chocolate turns white due to a process known as 'blooming'. There are two types of bloom: 'fat bloom', caused by changes in the fat or cocoa butter due to temperature fluctuations, and 'sugar bloom', caused by the reaction of the sugar in the chocolate with moisture.

How do you keep chocolate from clumping? ›

Keep Chocolate Moving

Another primary cause of clumping when melting your chocolate is keeping it still. You want to keep your chocolate moving while melting it to promote consistency. Use a whisk to mix around the chocolate as it begins to melt for a nice, even texture.
