FAQs

What happens when you substitute brown sugar for white sugar in banana bread? ›

You'll likely notice a more robust flavor, and the finished baked goods' color may also be darker. These color, flavor, and texture alterations come from how brown sugar is made.

Why use mushy bananas for banana bread? ›

Ripe bananas are not only softer and easier to mash and blend into a batter, but they are also sweeter, which is why baking recipes specifically call for ripe bananas in ingredient lists. As the bananas ripen, the fruit converts starches to sugars, making them sweeter and more flavorful.

Why does banana bread taste better the second day? ›

When the bread is fresh from the oven, there's still a lot of moisture in the bread. But by the second day, a lot of it has left leaving essentially the equivalent of dried fruit in a loaf of bread.

At what point should you not use bananas for banana bread? ›

If black bananas are spotted with mold, then it's time to step away! You absolutely should not use them for banana bread or consume them at all.

How black is too black for banana bread? ›

The best bananas for banana bread aren't yellow; they're black. Or they're at least streaked with black/brown, with just the barest hint of green at the stem. And again, the darker the better: there's no such thing as a too-ripe banana when you're making banana bread.

What happens if I put too much banana in my banana bread? ›

Banana bread recipes typically ask you to use overripe bananas so that they're easier to mush. This means it's tempting to toss all your bananas into the mix when you're ready to bake, to avoid food waste. But if you add too much of the fruit into your batter, your bread could turn out mushy, heavy, and wet.

What happens if you use brown sugar instead of white in baking? ›

Brown sugar, meanwhile, is dense and compacts easily, creating fewer air pockets during creaming—that means that there's less opportunity to entrap gas, creating cookies that rise less and spread more. With less moisture escaping via steam, they also stay moist and chewy.

Does brown sugar have the same effect as white sugar? ›

Health experts say that moderation is key while consuming brown or white sugar. Brown sugar may be better than white sugar for baking recipes and rich in flavor. While both sugars impact blood sugar levels, regardless of type, they can lead to weight gain, dental issues, and an increased risk of health problems.

Can I use brown sugar to beat egg white? ›

Conclusion: For my case whipping brown sugar with egg whites resulted in a denser sponge cake. So I'd recommend sticking to granulated sugar but if you run out of it brown sugar is still a good option, just that it might not give you the texture you want.
