However, the traditional recipe is not very keto-friendly, as it contains a lot of carbs from the flour and the gravy.

That’s why I decided to give this dish a low carb makeover by using arrowroot instead of flour, heavy cream instead of milk, and keto-friendly sausages.

The result is a fluffy and golden keto toad in the hole that tastes just as good as the original!

This recipe is also gluten free, nut free, and grain free, so it’s perfect for anyone with food allergies or sensitivities.

You can enjoy this keto toad in the hole as a dessert, a snack, or even a breakfast.

  • 1 tablespoon of arrowroot.
  • 1/4 cup of heavy cream (or double cream).
  • 1 medium egg.
  • 2 tablespoons of beef fat (or beef dripping).
  • 1/4 teaspoon of sea salt (or Himalayan salt).
  • 12 ounces of keto sausages of your choice (I used 10 Heck chicken sausages).

It is a very simple dish to create. However, there are a couple of points that you might want to pay attention to so you create the perfect flourless toad in the hole.

The firstis to make the Yorkshire pudding batter as detailed in the recipe. Please follow the steps and do not try to use any (not mentioned) substitutes or change the amount of each ingredient.

I am aware that some of the ingredients for the batter are more carby than one would like. But I assure you that, having experimented A LOT, nothing else will deliver the delicate, crispy, puffy Yorkshire pastry that makes every British Sunday roast special.

The secondis to ensure the beef dripping is VERY hot. You need to be generous with the amount, and when you pour the batter over it, it must sizzle. If it doesn’t, but you add the batter anyway, you’ll end up with a wet + eggy base.

Preheat your oven to 200°C/400°F and place the beef dripping in an ovenproof dish. Put the dish in the oven for about 10 minutes, until the fat is piping hot.

In a large bowl, whisk together the arrowroot, salt, and heavy cream. You can use a mixer, a whisk, or a fork for this step.

Add the egg and whisk well, until the batter is smooth and frothy.

Cover the bowl with cling film and let it rest for 30 minutes. This will help the batter rise better in the oven.

The arrowroot will thicken our batter. It will expand a little bit as well. If you skip this step, you may not get the desired rise, crispiness, and fluffiness.

While waiting for the Yorkshire pudding batter to proof, place 2 tablespoons of beef dripping, lard, coconut oil or butter in an ovenproof dish. Place the dish in the oven for about ten minutes before the batter is ready.

Make surethe beef dripping is piping hot or the Yorkshire pudding might be very soggy, might not rise, and will stick to the bottom of your dish.

Carefully pour the batter over the hot beef dripping and arrange the sausages on top. You can use any kind of sausage you like, but make sure they are low carb and keto-friendly. I used Heck chicken sausages, which are delicious and have only 0.6g carbs per sausage.

How Long to Cook The Gluten Free Toad In The Hole

Bake for 30 to 35 minutes, or until the batter is puffed up and golden brown.

Please check, in advance, the recommended cooking time for the sausages you are using. If it is longer than 25-30 minutes, please cook them first for the difference in cooking time.

Enjoy your keto toad in the hole with some keto-friendly onion gravy, if desired. You can make your own gravy by simmering some beef stock, onion, butter, and xylitol in a saucepan, and thickening it with some xanthan gum.

  • 1/4 cup 50 Double Cream/Heavy Cream

  • 1 1 Medium Egg

  • 2 tablespoon 2 tablespoon Beef Dripping (or Lard or Coconut Oil)

  • 1/4 teaspoon 1/4 teaspoon Himalayan Salt

  • 12 oz 340.19 g Sausages

  • Carefully pour the batter over the hot beef dripping and arrange the sausages on top. You can use any kind of sausage you like, but make sure they are low carb and keto-friendly. I used Heck chicken sausages, which are delicious and have only 0.6g carbs per sausage.
  • Bake for 30 to 35 minutes, or until the batter is puffed up and golden brown.

  • Cook until the Yorkshire pudding is medium brown color, not golden brown to achieve maximum crispness, fluffiness and the best taste.
