Ingredients

  • 1 onion
  • 2 tablespoons olive oil
  • 5 cups (1.2L) vegetable broth
  • 1 red bell pepper
  • 3 garlic cloves
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • Ground black pepper (to taste)
  • 1 tablespoon parsley
  • 2 carrots
  • 1 leek
  • ¼ (350g) cabbage (preferably white)

Instructions

  1. Mince garlic and chop the onion into small pieces. Set it aside and chop carrots, leek, red bell pepper, and cabbage.
  2. In a large pot heat olive oil and once that you hear sizzling add onion and garlic. Cook for 2 to 3 minutes at medium heat.
  3. Add paprika and stir for 30 seconds.
  4. After that add the rest of the vegetables and salt and pepper, then cook at low heat for 10 minutes stirring occasionally.
  5. Add the vegetable broth and cover the pot with a lid, cook for 10 to 15 minutes, then add more pepper and salt if needed.
  6. Serve it with parsley on top.

Notes

This is a basic vegetable soup recipe, but if you want to you can add more spices like turmeric, curry, etc. Keep in mind that paprika with salt and pepper is already the best seasoning for vegetable soup.
